Banana Chocolate Muffin

2 ripe bananas – the riper the banana is the sweeter and moister the muffin will be

2 large eggs 

1/3 cup honey

2 cups oat flour 

3 tsp. baking powder

1/2 tsp. cinnamon 

A pinch salt 

1/4 cup coconut oil 

3/4 cup Greek yogurt 

1/2 cup chocolate chips 

1/3 cup of walnut (optional)

 

Preheat oven to 400 F. and spray the muffin tin with a cooking spray or line it with paper liners.

Mix all dry ingredients together in mixing bowl.  Mix all wet ingredients together in another bowl (without chocolate chips and nuts) 

Fold the wet ingredients into the dry ingredients bowl.  Add the chocolate chips and nuts as well. 

Fill in the muffin tins and bake it for 15-18 minutes or until you can poke a toothpick through it, and it comes out clean.
